Place maple syrup in a tin lined copper frying pan and place on medium heat. Reduce maple syrup by 75%.
Meanwhile, beat egg whites on medium speed in a copper bowl for the KitchenAid mixer until soft peaks are formed. Slowly drizzle in reduced maple syrup, being careful not to splash any hot syrup on yourself.
Once all syrup is added, place KitchenAid mixer on high speed for 1 min. Meringue should be stiff and have a smooth texture.
Decorate any dessert plate with meringue and toast with portable torch. Serve immediately.
